    So you just grill it till there are grill marks? I've never done it before. For how long?
     
  • @pocatar ya! I warm up the BBQ for about 15min to 400F and then I spray the veggies with non-stick spray. I only turn them once which is how the grill lines happen. 5min on one side and then maybe 3min on the second. I just wait until they are soft when I pierce them with a fork. I keep them a little on the crunchy side so it doesn't turn straight to mush when I cut into them. You can do the peppers in the oven too. Cut in half, place the rack close to the top and broil until the skin starts to brown and bubble.

More of this weeks meal prep! I used two recipes from @weightwatchers4me app Drizzle Me Skinny. Buffalo Chicken Pasta Bake (8sp) and Sloppy Joe Casserole (7sp). I tasted a little of the buffalo chicken. Ohhh myyyy goodness, so good! Also made Lemon Butter Chicken (5sp). Smells so good! Can't wait for this week's lunches and dinners.
