Yesterday I made Korean BBQ I made all the sides except the kimchi. I had mine with quinoa it was still yummy. The marinate for the Chicken Bulgogi was pretty throw a bunch of shit in my nutribullet: brown sugar, apples, pineapple, raw honey, ginger, red pepper flakes, orange zest, orange juice, green onion, garlic, rice vinegar, low sodium soy sauce, kosher salt, pepper, and sesame oil. My @motivatedmeals tip of day: don't be afraid to try cooking food from different cultures you can always substitute bad ingredients with healthier options. Then you can mix and match different foods like my Korean tacos that's a fusion of Mexican and Korean and it was divine. Pretty much took those left overs and added guacamole and tortillas boom just like that you got Chicken Bulgogi Tacos. The sides took me a while like an hour but you can look up recipes was online. For the most part you use the same things like sesame oil, soy sauce, Korean chili paste, sesame seeds, sugar (I substituted stevia), and rice vinegar. To make the Korean potato salad I used red potatoes and tons of veggies: apples, cucumber, raisins, red bell pepper, carrots, green onions, and onions. My best friend @takelupac sent me these quotes when I told her I was sad because me and my boy friend were just not working out. Small things like this are all you need to remind yourself that in the end you must understand your worth. If you don't like something in your life change it. No point in being in a relationship where you are only happy 1/2 the time. Love yourself enough to walk away and accept the things you can't change. I am blessed that I realized that somethings end so other things can begin.

I did pretty damn good lol made a Spicy Tuna Roll with brown sushi rice. I used olive oil mayo, green onions, and siracha for the spicy tuna. I love hmart picked up some Korean ingredients too, might do Korean BBQ tacos this week. You can totally lighten up Italian food. My Chicken Mushroom and Veggie Ragu with Polenta. Served with a side of green beans and quinoa garlic toast. For the ragu I used diced chicken breast, green/yellow/red bell peppers, mushrooms, red onions, fresh tomatoes, garlic, basil, chicken broth, and tomato sauce. My @motivatedmeals tip of the day: to make the polenta creamy but lower the fat, I used a small of amount of whipped butter, olive oil, almond milk, nonfat plain yogurt, fresh garlic, and topped it with dried asiago/parmesan. My #mancrushmonday goes to my best friend of over 20 years Mr. Tobbi with the photobomb of the century. I think he wants some of my Grilled Chicken Feta Mixed Green Salad. I love making my own dressings made a raw honey orange balsamic vinaigrette. My @motivatedmeals healthy tip of the day: when you can make your own dressings. Store bought dressings can be filled with sodium, fat, sugar, calories, and preservatives. Vinaigrettes are simple start with olive oil and add some type of vinegar like balsamic vinegar, apple vinegar, or rice wine vinegar. To season it I normally add Dijon mustard, kosher salt, and pepper. Tobbi is my everything everyday I get to share with him is a blessing. He has had 2 seizures in the last few months and each time I literally thought he died the feeling is horrible. Then he just wakes up gives me a kiss and goes on with his day. Mexican version of a stuffed pita and a side salad. Grilled Swai Pita with mango salsa and Mexican style tzatziki. I love cooking like I'm on chopped when I only have certain ingredients in the fridge lol. I didn't have dill but I had cilantro so said ef it this tzatziki is going to be Mexican style. For the tzatziki I added plain Greek yogurt, almond milk, cucumber, red onions, lemon juice, lime juice, and cilantro. My @motivatedmeals tip of the day: use fresh herbs as often as you can to garnish or mix into your dishes. My version of Chicken Curry with a side of ancient quinoa. For the curry added ginger, onions, garlic, cauliflower, carrots, red potatoes, asparagus, green bell pepper, red bell pepper, yellow bell pepper. For the stew part I added light coconut milk, fat free chicken broth, plain yogurt, and almond milk. To season it I took more of the Indian route. I used turmeric, cumin, coriander, curry, chili spice, red pepper flakes, kosher salt, pepper, mustard seed, and paprika. My healthy tip of the day: try to portion out your meals. I always cook and eat in portions of 1/4 protein 1/4 carbs 1/2 veggies this rule applies to anything I cook even stews and soups. Also you can make creamy based stews lighter by replacing cream with almond milk or light coconut milk. I love cooking food from all over the world I managed to combined Indian and Creole tonight in the most delicious way. I did Blackened Cajun Swai with a roasted curry cauliflower and sautΓ©ed asparagus. I decided to skip carbs tonight and replaced it with the cauliflower. For the roasted cauliflower I cut up a whole head of cauliflower, onions, garlic, and ginger. In a bowl I combined melted coconut oil, turmeric, coriander, cumin, mustard seed, curry, salt, pepper, paprika, and lemon juice. Then poured them over the cauliflower and roasted them in the oven. Been on a salad binge lately lol. Chinese Chicken Mandarin Salad with a sesame miso ginger dressing. After a bomb work out this is like a treat to me sweet and savory. My #motivatedmeals tip of the day before you go to sleep prep your lunch and breakfast. I am always in a rush in the morning, when I don't prepare anything ahead of time and just run out the house I tend to binge or look to unhealthy options for lunch. I prep my morning protein smoothie in the nutribullet cup and store it in the fridge overnight. I add everything but the almond milk and ice, takes me 1 minute to make a well rounded breakfast. For my lunch, I prepared a second salad in a tupperware. I put the almonds and wontons in ziplock bag so they don't get soggy. For breaks I also throw in some snacks raw nuts and fruits. This keeps me going and energized all day I don't get that after lunch tired feeling anymore. #healthygourmet #homemade #mealsaround500calories #motivatedmeals #fresh

Grilled Chicken Parmesan Salad with my homemade honey dijon balsamic vinaigrette. Tips to cook chicken breast perfectly I marinate it with kosher salt, pepper, lemon juice, and Mrs. Dash lemon pepper salt free seasoning. Put the heat on medium high add 1tbs of coconut oil sear the chicken skin side down for 2 minutes until it has a nice golden brown crust. Flip it do the same to the other side then turn down heat to medium let it cook for 5 minutes. I glazed it with a little or my vinaigrette at the last minute it helps tie the meal together and let rest for a few minutes then slice this technique ensures that it remains juicy and moist. #homemade #healthygourmet #motivatedmeals #juicyandmoist #likeme #lol #pekpek

Put the heat on medium high add 1tbs of coconut oil sear the chicken skin side down for 2 minutes until it has a nice golden brown crust. Flip it do the same to the other side then turn down heat to medium let it cook for 5 minutes. My lunch for today sweet potato hash with a fried egg. I cooked both of those items on a non stick pan and with a little coconut oil. So good and good for you with a side of wheat toast and salad. For the sweet potato hash I just cut up sweet potatoes, onions, garlic, onions, green onions, green bell peppers, and yellow bell peppers. #healthygourmet #homemade #motivatedmeals
